Tottenham Loaf Cake

Hi! 

I love cake and custard and recently I made this Tottenham Cake for Valentines Day and it was so yummy especially with vanilla custard!



Ingredients:
125g Butter, soften
125g Caster Sugar
125g Self Raising Flour
1 tsp Baking Powder
2 Large Eggs
1 tsp Vanilla Extract
1 tbsp  Milk

For the icing
150g Icing Sugar
1 drop of Pink/Red food colouring
1 tsp cold water 
Sprinkles (optional)

Preheat the oven at 160'c

1. Place the sugar and butter in a mixing bowl and cream together until white in colour and fluffy
2. Add the eggs 1 at a time into the mixture and beat.
3. Fold in the Self raising flour and baking powder until fully combined
4. Place the Vanilla extract into the milk and pour into the mixture
5. Bake between 12-15 minutes at 160'C until brown in colour or until a skewer comes out clean
6. Leave to cool completely if not the icing will not set
7. Using a skewer poke random holes throughout the cake
8. Mix together 60g of Icing sugar and 3 drops of warm water and pour over your cake. I found that leaving your cake on a cooling rack with a plate or cake tin underneath made the clean up easier.
9. Mix the 150g icing sugar and food colouring together until fully combined. Add the cold water slowly until you have a thick but pourable consistency.
10. Pour over your cake and place some sprinkles on top. Leave the icing to harden and enjoy.

Tea anyone?

Hi!

I love a nice cup of tea but I always have to have something to go with it or it just doesn't feel right so the other day I decided to make a marble loaf.


Ingredients

- 175g Butter, soften
- 175g Caster Sugar
- 3 Large Eggs
- 1/2 tsp Vanila Extract
- 225g Self Raising Flour
- 25g Cocoa Powder
- 2 tbsp Whole Milk

1. Place the butter and sugar into a bowl and beat until white and fluffy.
2. Add the vanilla extract and eggs into the mixture and beat well.
3. Pour the self raising flour into the mixture and using a hand-held mixer mix well.
4. Spoon out half of the mixture in a separate bowl and add the cocoa powder and milk. Mix.
5. Using a lined loaf tin spoon in 2 large spoonful of vanilla batter and then 1 spoonful of chocolate batter. Alternate on the next layer so 2 chocolate and 1 vanilla etc. Once Finished using a skewer make a 8 figure in the batter and bake.
6. Bake at 160°c for 15 - 20 minutes or until the skewer comes out clean
7. Sprinkle icing sugar on top and enjoy

You can be as creative as you want with the marbling or if you really can't be bothered you can make it half and half but I hope you try this recipe and tell me what you think.

Baking Addict!

Hey!

So lately I've not been eating out as much but I've been baking more! Hooray!!

Ferrero Rocher Cupcakes


Sponge: Chocolate
Filling: Ferrero Rocher
Covering: Nutella Buttercream 
Topping: Roasted Hazelnut, Dark chocolate, Ferrero Rocher


Ferrero Rocher Cupcakes 
Okay I ain't too fuss about weight and calories as I feel life is just to short to be counting how much I eat etc. This cupcake contains 2, YES TWO! Ferrero Rocher's and a very tasty Nutella buttercream finished off with a hazelnut border.. dribbles.


Oreo Cupcake
Sponge: Chocolate
Filling: n/a
Covering: Oreo Buttercream 
Topping: Oreo 


Oreo Cupcakes
I'm not a fan of Oreos but this is amazing! The Oreo took away most of the sweetness which made it less sweet. I added an Oreo at the bottom of each cake to give it a bit of a crunch.


Mocha Celebration

Sponge: Mocha 
Filling: n/a
Covering: Nutella Buttercream
Topping: Chocolate Flake, Rainbow Sprinkles

I baked some cupcakes for my sister's friends birthday. She explained that she doesn't have a sweet tooth so I added some instant coffee into the cake mixture to lessen the sweetness.
